Crispy Kytti’s Cauldron – Goblin’s Envy



Crispy Kytti’s Cauldron is a new hot sauce brand from a couple in Iowa. With sauces based on fantasy themes the company has a wide variety of creative flavors. The use of fermentation in their sauces aids in creating more complex flavors, and the small batch nature allows them to use high quality ingredients and take creative risks.
The first sauce that I’ve tasted from the company is Goblin’s Envy, a green sauce with a jalapeno, serrano, and poblano base. I’ve always been a big fan of serranos, and poblanos have a nice earthy flavor even though they don’t bring much heat to the table. I’m particularly picky when it come to green sauces as many of the commercial varieties I’ve tried have lacked the fresh vibrant “green” flavor that I crave with the style.
Thankfully Goblin’s Envy brings that big fresh punch that I look for. The flavor of the pepper blend comes through first and foremost. There’s a good balance of acidity as well, and the use of white wine vinegar instead of the cheaper distilled gives that acidity a softer attack. What really makes this sauces interesting however is the herb blend used. Most green sauces are Mexican style (though some with Asian influences also exist). This goes in a different direction entirely with the use of rosemary and thyme, taking it the flavors into a more European direction. The herbs blend very well with the peppers and vinegar, giving this sauce a great fresh, herbaceous, and piquant flavor. The addition of lime juice adds a subtle sweetness and tartness as well.
Not only is it delicious, it’s extremely versatile. The herbs accentuate the peppers instead of becoming dominant so this worked well with pizza, Mexican food such as tacos and burritos, cheesesteaks, and poured over some chili cheese fries. The heat level is also rather low, so you can use this to boost the flavors of foods without having to worry about mouth burn and heat sweats if you’re not in the mood for extreme heat.
